Recipe: The 3-Day Cleanse Book
A week or two ago I got a note in my inbox from the girls over at the BluePrint Cleanse about their new book, The 3-Day Cleanse. While I’ve done the cleanse and have mixed feelings about it (mostly positive), one of my main complaints was the cost. Generously, the BPC girls have provided simple recipes in the book to re-create their famous juices, along with recipes for entrees, sides, salads and dressings! I had to buy it and give some of them a try.
On the 6-ride home last night, I paged through and picked out what I’d tackle. I settled on a Gazpacho recipe, a Cucumber-Grape-Pear juice, and some Oven-Roasted Tilapia. Long story short, I got through everything but the Tilapia and decided to try that later in the week - between the gazpacho ingredients and the cucumbers and pears, I was officially OVER chopping. Chopped out. But everything tasted great! I’m so excited to try more recipes. I’ve spared you the results of the Cuke-Grape-Pear juice, because it was a murky color, due to my use of red grapes instead of green. Not cute. But trust me, it was delicious. Recipes are below and a couple pics are to follow soon.
Gazpacho
1 English (whatever) cucumber, peeled, seeded (whatever) and diced
1/2 orange pepper, seeded and diced
1/2 yellow pepper, seeded and diced
3 medium tomatoes, seeded and diced
1-2 tbs. white wine vinegar (I used champagne, because that’s all I had, and it was fine)
1-2 cloves garlic
3 tbs. extra virgin olive oil
2 tsp sea salt
1/2 avocado, diced
black pepper to taste
Combine 1/2 of the cucumber, 1/2 of the orange and yellow peppers, and everything else but the avocado into a food process/blender until smooth. Add the rest of the peppers and stir to combine. Garnish with avocado, another glug of olive oil, and black pepper to taste. So easy!
Grape-Cucumer-Pear juice
1 pint (10 oz.) green grapes
1/2 large cucumber
1 D’Anjou/Bosc pear (I love Asian pears, but, you really need the juicy kind for this juice, to make it…jucier. Just trust me)
1-inch piece of ginger (crucial!)
Chop up the pear and cucumber into manageable pieces - you know your machine. Juice/blend/food process all ingredients together until smooth. Re-run the wet pulp back through if you’re using a juicer. Scrape off any foam and serve chilled. This is just so fresh, and the ginger gives it a wonderful depth and heat. And see? Practically idiot-proof. And so heathy. Can’t wait to try a few more!
