I received this Olive Oil Granola from mynyplate last week.  Y’all, this stuff is awesome.  Sweet, salty, and crunchy.
He’s the recipe if any of you are interested.
Olive Oil Granola (adapted from the New York Times)
3 c. old fashioned oats
1 1/2 c. pistachios, de-shelled and coarsely chopped
1 c. almonds, chopped and slivered
1 c. coconut
3/4 c. maple syrup
1/2 c. extra virgin olive oil
1/2 c. brown sugar
1 tsp. salt
1/2 tsp. cimmamon
1/2 tsp cardamon 
3/4 c. dried apricots, chopped (or any dried fruit you love)
-preheat oven to 300 degrees
-combine all ingredients except apricots (or other dried fruit) and make sure to taste
-spread on baking sheet 
-bake for 45 minutes, stirring every 15 minutes
-remove from oven, toss with dried fruit

Yay - so glad you got it! I’m craving it again just looking at it!
