Currently making a variation of Thomas Keller’s Crispy Braised Chicken Thighs with olives, lemon and fennel. By variation, I mean, might really be weird. I bought leeks instead of fennel, and a whole chicken cut up instead of thighs, so there’s teeny bones everywhere. Goddd. And this recipe sounded like one of the easier ones from this cookbook I got for Christmas last year. Fingers...

Interesting take on Eataly. I have to say, I wondered the same thing about the staff. Same with the sheer volume of product they seem to have in this place. Am I crazy to wonder if it will all sell and turn over at a profitable enough rate? That said, I’ll do my best to keep it in business when I stop by next week!
